Effects of Ultra-Low Temperature

Even in frozen storage at 0 °F, food changes over time. Flavor and texture quality declines, vitamin C level diminishes, fades and redness of lean tuna darkens. Those effects are due to chemical reaction (oxidation) of food components over time. Such changes can be minimized by having the storage temperature as low as possible. In case of tuna especially, if it is stored at ultra-low temperature at -76 °F and if there is no temperature fluctuation, bright red color and taste can be retained for a long time.
When food is frozen, moisture within the food crystalizes. These ice crystals absorb smaller surrounding ice crystals and steadily grow larger during refrigeration and break the food cells apart, causing the food quality to deteriorate. In a lower temperature storage, ice crystals grow slower. When the food is stored at ultra-low temperature, the growth of ice crystals is suppressed. As cell destruction is minimized, the amount of drip (meat juice) at the time of thawing is also kept at a minimum. Therefore, deterioration of food quality can be prevented.
